Banana Nut pancakes

J. & I are big breakfast fans.  We do pancakes, waffles, crepes, french toast--I'm not a fan of savory food for breakfast most of the time. 

This morning we used one of our favorite pancake recipes from Vegan with a Vengeance (Isa's first cookbook)--banana pecan pancakes. We made them with all white whole wheat flour, and used hazelnuts instead of pecans (because that's what we had).  I subbed the oil with soy yoghurt.  This recipe comes out wonderfully every time for us.  Just keep the pancakes small (I make 4 to a pan), because they are thick and cakey and won't cook well if you make them too big.

I love banana pancakes! Do you know Jack Johnson's song, "...makin' banana pancakes, pretend like it's a weekend now..."? Do you like the white ww flour? I have used it and sometimes it tastes a little bitter to me. I wonder if it was just the particular bag I got?

I like the white ww flour in pancakes and waffles. I haven't noticed a bitter taste in those recipes, where I've subbed it in. I've been experimenting with it in no-knead bread too, but I don't think that I've nailed the use in that context. I'm still on my first bag of it--I bought the King Arthur brand.

oh and p.s. i love that jack johnson song too. and i especially like to play it while i make the pancakes!

It's not as good as Veganomicon, but it still has some great recipes. Josh and I love:
-the corn & blueberry muffins (not innovative, but tasty)
-pumpkin waffles (we made these like every weekend during the fall)
-chocolate raspberry cake (huge hit for a birthday cake)
... I haven't been as impressed with the entree selection, although the stuff I've made has been all either fine or good, just not fantastic. It has some nice soup recipes too.

I think it's worth it for the breakfast recipes and desserts. It gets good use in my kitchen, just not as much as Veganomicon.

i find it funny that you like sweet breakfasts! i really don't, but now i remember you being unhappy with the savory indian ones.
on saturday I made two batches of banana muffins from veganomicon. I made the bran banana ones, omitting the sugar entirely. these were among the best muffins i've ever had, though i'd add some berries next time. they tasted like soggy wheat germ, which is something i could eat all day. guy liked them, but nobody else did, for which i was grateful. so, i'll recommend them warmly, but only if you love soggy wheat germ. i'll definitely make them again.
i also made the lowfat banana bread, as muffins. guy talked me into using an extra banana. i didn't like them that much, but i don't like sweet banana bread. other people liked them plenty. alas, it's kind of hard to usefully judge these things b/c i've never made a banana product that didn't receive good reviews.
finally, i made pancakes with apple slices and chopped walnuts and cinnamon. these are my favorite ingredients for pancakes, and something worth trying, if you haven't already.
